Rediscovering George (Foreman)

When my husband and I first got married, we purchased the famed George Foreman Grill.  We used it to grill our chicken breasts and turkey burners.  Trying to be healthy, we cooked a lot of chicken on the grill.  BLAH!  We got tired of it.  Personally, I think it dries out chicken breasts.  Chicken  breasts really aren't bad for you, anyway, so I suppose the George Foreman Grill is overkill when it comes to cooking that.  Needless to say, the grill found it's way to the back of our cabinet and stayed there.  I recently had the thought that I needed to get the grill out to put with the items we are selling at our garage sell.  But, with our griddle going out, I decided to use George for making grilled cheese/turkey sandwiches.  Guess what?  They turned out amazing AND they were pretty much pan-inis!  While making breakfast for dinner (a regular at our house) the other night, I decided to try to cook bacon in the George.  I have to admit that I remembered you could do this because I had just recently watched the episode of The Office when Michael Scott burns his foot on his George Forman grill while cooking bacon at his bedside.  I cooked the slices for 4 minutes on each side and it was seriously the tastiest bacon!  It was perfect in texture and taste, and I am guess a whole lot healthier for us since it wasn't cooked in the fat.  So, I suppose I will keep George a little longer.  He has proven to be a faithful and healthful cooking companion!

24 Days of Thanksgiving: Day 12

There are some things that are seemingly "small" that I am thankful for.  Here are a few random things I am thankful for:
{A few of my favorite things}
* Amazon Prime.  Free two-day shipping.  All the time.  Do I need to say more?
*Trader Joe's dark chocolate bar with caramel and black sea salt.  YUM!
*The beach.  I can't imagine my life without it.  I've lived in Southern California all my life, so the beach has always been a quick get-away.  I look forward to a get-away with my hubby to the beach in the near future!
*Leggings.  In the late 90's I wouldn't be caught dead in them.  Now, I think they are quite comfortable.  And that isn't just because I'm a mom!
*Micro-fiber cleaning cloths.  They are great for everything from dusting to wiping down a stove to cleaning spots on the floor!  Even glass!
*The Gap.  LOVE their clearance section!  They closed the one in our mall.  BOooo!
*Peanut M&Ms.  They are good.  Too good.
*My mattress.  It's so stinking comfortable.  It is a Sealy Beautyrest with a pillow top...well worth the money!
*Subway's Chicken Marinara Melt.  I did this sandwich at Subway before it even existed.  Now it is officially a sandwich there AND its the 5 dollar sub for November!  Wooohooo!
*Fluffy, Cumulus clouds and blue skies---like we had today.  Southern California fall is simply beautiful!
Yup.  I said the list was random! :)

I Apologize!

I must apologize if I have bored you, my dear readers (if there are any), with my lack of posting this month. It seems I am having trouble balancing posting photos and updates on Facebook and on my blog. Besides my mom, which I need to get signed up for Facebook, do I have any readers that aren't on Facebook as well? I have contemplated quitting my blog because I can update nearly everyone on Facebook. However, I love to write and I feel I still need that outlet. Although its rare that I get a creative inspiration to write, due to lack of sleep and time, I like that I have place, my own little place, to write whatever I need to write. And I suppose it really doesn't matter if anyone reads it or not because that isn't my purpose. The purpose of this blog has become to write about my life in a more creative way. I am sure those faithful readers...my two aunts...appreciate any post with photos of Madelyn and Jackson, though! I'm am going to make an effort to make the postings on this blog different than the generic postings of photos on Facebook. And so without further ado, here are some more blog posts...

Its about time...

...to give you all an update! Of course I am speaking of an update (mostly) about Jackson. He is now 15 months old! He is no longer a baby! He is a little boy! (Boy---is he ever!) It seems Jackson's vocabulary grows by at least 5 words a week. It is pretty amazing. This boy is like a sponge. He sucks up everything! His favorite words lately are "house," "Noah," "Nolan," "teeth," "bath," "duck," "meow," and of course, "Mama," and "Dada." That is just to name a few. He is on his way to being a very good communicator. I wonder where he got that from?

Some of his favorite things to do right now are brushing his teeth, watching "Mo" (Elmo) on TV, reading books, especially books with Elmo, Big Bird, and Abby in them, singing the "Rubber Duck" song from Sesame Street, doing the "Itsy-Bitsy Spider," and cuddling on the couch with a blanket, a good book, and his mommy and daddy. Here are some photos with more about what Jackson (and Troy and I) have been up to lately...
Jackson cuddling on the couch with "Mo" and a good book. It turns out that his buddy "Mo" is a good reading partner! One of Jackson's favorite things to do is "drive." He loves to get in the driver's seat and move the steering wheel. Don't worry, though...he doesn't do this without very close supervision, and without the car on, I might add. It is really cute, though...when we get in the car he says, "keys...drive!"One of Jackson's favorite toys is a ball-popper thing. It has a fan in it that makes the balls pop out of it into the air. It is pretty cool, actually! (Thanks, Di!)
One of Jackson's favorite places to sit now is the bear chair. My grandpa made each of us kids one when we were little, and now Jackson is using mine. That means a lot to me!
Jackson is very, very fond of Nolan. He will wake up saying his name over and over again. He will randomly ask for him. It is really cute, and I think Nolan is very honored that his cousin likes him so much. Troy mentioned to Nolan a few weeks ago that Jackson really liked his toys, and Nolan replied, "It's probablly because I'm his favorite cousin." I am pretty certain he takes pride in that. Speaking of Nolan, please remember to continue to pray for him and Angie, as they are still going through such an immense transition to life without Mark. They need to be lifted up in prayer daily. For updates on how their lives are going, visit www.prayforthelamberths.com.
Jackson loves Cassie, and Cassie is like his nanny. She gets worried if he cries, but, sometimes will keep a safe distance. She lets Jackson pet her, though. She is a good kitty to have around little ones! Instead of cat (pronounced "at"), Jackson is now calling Cassie "Meow" because he knows we think it is cute.
This is random amoungst all the Jackson stuff, but Troy and I FINALLY got to go out on a date after months of going without one. Under the circumstances of the last several months, we never got to go out together. At the end of January, we had the oppurtunity to go out to for dinner at PF Changs and a movie. We went to see Mall Cop, which was a clean, and silly comedy. That was just what we needed to see.
Due to the circumstances of December, our annual Citrus Group Christmas Party was postponed until the end of January. We all had a great time, and I was amazed that Kimm kept her Christmas decor up all through January just for the occasion! At the end of the night, Jackson took it upon himself to snag a whole wall of the ginger bread house. Don't worry folks...after a few bites, I threw it away!
This is just a cute picture of Jackson taken at Polly's Pies. I had to include it somehow. This is the first sonogram of our little baby # 2. The two "x's" mark the crown and the rump. The baby's heartbeat was happy and healthy! This was taken two weeks ago at 8 weeks.

Jackson has become a fan of dips and sauces. Int his photo, he had just discovered ketchup. He loves Cholula, a mexican hotsauce, on his eggs. I tasted the stuff and it is spicy! But, he loves it and begs for more! When Jackson is dipping his food in something, he loves to say "dip" over and over again. This little boy has recently discovered his old car seat. We have it sitting on the office floor due to lack of storage space. He will climb in it every chance he gets, while giving us a silly grin!
Jackson has the most beautiful eyes (at least I think so!). I had to put this picture up to show them off. Also, his hair is getting thicker and blonder as it grows, and, as a result, he gets pretty crazy hair after a nap (as shown above!).

This first photo is from 6 1/2 weeks along in my pregnancy, and the second was taken today, at 10 weeks. I think I started to show overnight (and, no, I am not sticking out my stomach...I am actually holding it in...) I thought it was just me, but when I walked into the MOPS meeting today, my table leader/friend said "oh wow...you are showing!" I suppose this picture is proof. I am glad to say I still have only gained 3 lbs, and 1.5 of those pounds was just in the last week and a half.

So, there is a pretty long update! I am sorry I haven't been posting blogs as often. Quite frankly, sometimes I would rather be sleeping! :)

Did you know....

...that on October 31, 1517, Martin Luther posted his 95 Thesis on the door of the Catholic Church in Wittenberg. It challenged the Catholic church concerning the selling of indulgences (selling forgiveness of sins of the purchaser or the purchaser's loved one). Luther made many points, and one of them was that forgiveness was God's alone to grant and no one could do any works or pay anything to recieve it, as it says in Ephesians 2:8-10. This event sparked the Protestant Reformation. As a result, Reformation Day is celebrated on October 31. So, instead of celebrating Holloween, I choose to celebrate Reformation Day. It isn't an alternative to Holloween. Better yet, it is a true celebration of God's free grace. I thank the Lord that men like Martin Luther had the guts to confront the Catholic Church.

A question you never ask a woman...

...is "are you pregnant?" I had a woman ask me just that today. Then, she dug herself even deeper and said, "Oh, well, you must have just had your baby, then, right?" I replied to her (almost sarcastically...) "Yeah, like 11 months ago." Then, just when I thought she couldn't put her foot further into her mouth, she said, "Oh, well, you must not have gotten rid of your baby fat yet." WHAT?!?! Who says that kind of thing to someone they don't even know??? I wanted to ask her, "Are you all there?" but, unlike her, I can keep my mouth shut. I just replied with a smile, "Well, I have lost almost 20 lbs since May...I would say that is a start!" All the while, in my mind I was making up words like the father in The Christmas Story. Sigh.
